Delaware Phoenix

Welcome to Delaware Phoenix, a New York State Farm Distillery reborn in the Northern Catskills. Founded in 2009 by Cheryl Lins, and named Distillery of the Year in 2010 by the NY Independent Spirits Competition. We reopened in 2023 with our botanical garden in Worcester and our distillery in Walton. We grow our own botanicals and locally source or forage all remaining ingredients (except fennel and anise). This practice honors absinthe’s traditional agricultural roots and reflects our dedication to sustainable farming practices and craftsmanship.

Using draft animal power in the garden, our production process celebrates the botanicals we cultivate each year. We then distill, color, bottle, and label by hand, ensuring every bottle of Delaware Phoenix absinthe is made with care and quality.
